    I make steak almost every night and its standard sear for me. And 100% carbon steal pan too for both the high heat and better control over cast iron. A few adjustments though.. Start with hotter pan and max two minute sear per side. Gets you a good crust but the heat doesn't penetrate too deep into the meat. Then in the oven but drop the temp to 275 to slow cook for an even cook. Top with ped with cold garlic butter) and then pull out at the perfect desired temperature. This give a good thin crust, even cook through the center, and you have perfect control.

    I’ve tried every single possible option for getting my hand to work properly, I watch this channel as well as other channels. And for the amount of time and effort and partial improvement back to no improvement back to you, I can’t even make an egg in the pan it won’t stay stuck… It is just not worth it. This is too much work to make something like a frittata. I don’t know how many people have hours and hours to manage your pan just to make some eggs some bacon simple stuff. I hate to say it but you can go into most grocery stores that have a little kitchen aisle and you can buy a $10 ceramic pan or some kind of nonstick pan put a little olive oil in and you can make some eggs. On these pans that you guys keep pumping up like they’re the greatest thing ever, how many people have days and weeks to worry about weather Needs to go through a several hour seasoning process yet again. Sorry for rambling. I bought one of those expensive motel in Storke something Lake that. Thankfully, I didn’t spend too much money. But I have yet to make an egg in this pan that I could eat there after. Best of luck I just don’t have the time.

    Returned mine. It’s not smooth like their carbon steel pans. It has a rough texture like cheap cast irons.
